NO NOODLES ABOUT IT and APPLE CRISP DINNER

I was surfing the web looking for some LOW CARB recipes and came across the following two recipes that I wanted to try.  The first one is for THE BEST LOW CARB LASAGNA.  I have seen many recipes using zucchini slices instead of pasta noodles.  This one caught my attention because of the addition of vegetables besides the zucchini.  I sliced my zucchini about half as thick as their picture shows theirs so I did NOT bake mine in the oven first.  I felt it was thin enough to do "it's thing" in the oven while baking assembled.  And I was right.  They were perfectly tender and tasty! For my meat layer, I used the best quality ground chuck mixed with some Cudighi Sausage (sample recipe and history at that link) that the local grocery store I work for makes themselves.  I did not add any more salt or pepper because the Cudighi is seasoned well!  It was DELICIOUS!!!!!!  I will be making this one again when my husband his home from his TOUR in Australia.  It's a keeper!

The next recipe I did was for an APPLE CRISP for dessert.  It is also a winner!
 

I used SPLENDA granular sugar in place of the white sugar in the apple layer; as well as SPLENDA brown sugar in the crumble layer.  I wanted to use almond flour in the apple mixture, but I honestly don't know if it would have the "binding" effect as the all purpose flour does.  I am pretty sure the flavor would be okay because nuts and apples do go together.  But the purpose of the flour is important so I didn't venture into that experiment yet.  The topping of the drizzled CARMEL was delicious and SUGAR FREE because I used the one available from Walden Farms.  I found it at a local grocery store, but this link shows you what it is.... REINDEER FOOD and DUSTPAN COOKIES

REINDEER FOOD
NOTE: This is for fun and not to be eaten!
You will need plain Oatmeal, Birdseed, Rice Crispies
and Multi Color Glitter.
Take 1 part of each and put into a plastic bag.
Shake well and add the below poem. 
On Christmas Eve let the kids sprinkle the Reindeer Food
all over the yard.
POEM
Make a wish and close your eyes tight,
Then sprinkle on your lawn at night.
As Santa's reindeer fly & roam
This food will guide them to your home.
For your gift to the reindeer and Rudolph too
Your wish may be real, your dreams may come true.
*NOTE... There is EDIBLE GLITTER available at Michaels.
*NOTE #2... I prefer adding colored cereals like Fruity Pebbles or something to be like the multicolored glitter.  Then it doesn't matter what critter or child might eat from the baggie.

DUSTPAN COOKIES
Simply bake up your favorite batch of cookies – place them on the dustpan;
then take a few & crumble into smaller pieces (to show that you swept them up…
even though you didn’t!)  Wrap the Dustpan with cellophane
and add a bow & gift tag with the following poem:
I was in a hurry,
‘Cuz time was running out.
I’d baked a batch of cookies for you,
And when I turned about,
I saw they’d fallen on the floor.
It made me want to shout!
How could this happen at this time,
When time was running out.
I couldn’t throw them in the trash.
Whatever could I do!
I quickly swept them in this pan,
And rushed them off to you.
Or—
I was baking some cookies
When they dropped on the floor.
So I scooped them right up
And rushed them to your door!

With all the rising costs of everything, we are
trying to really budget it all!  We are really
keeping an eye out for great, creative, useful,
unique gifts to give everyone on our lists.  As
I find ideas while surfing the web or looking
around in the stores, I will share as much as I

Oven mitt — For a "warm" hand of friendship just as you've given me, and the
